Many times milk gets spoiled and there are a variety of reasons such as a shift in temperature which leads to bacteria that converts the lactose into glucose and galactose and produces lactic acid. The first thing that comes to mind after looking at the spoiled milk, is the thought of throwing it, but there are many reasons that you should not do it. You can use this milk to prepare delicious desserts. Here are some delicious recipes that you can make using spoiled milk:
- Rasmalai
Strain the excess liquid from the spoiled milk to get the clay textured curd. Mix this with 2 tbsp of refined flour and make small balls from this mixture. In a pan, add ¼ cup milk, 4 tbsp sugar, a cardamom pod, and water. Once the sugar has been properly dissolved, add the balls and let them soak the mixture. Refrigerate overnight.
- Milk cake
Another dessert that you can make with spoiled milk is milk cake. In a bowl, mix 3 tbsp butter, 3 tbsp sugar, salt, ½ tsp baking soda, 2 cups refined flour, ½ cup spoiled milk, ½ cup water, and 1 egg. Grease the baking tray with some oil and pour this prepared batter into it. Bake at 300 degrees celsius for 25 minutes. And the milk cake is ready.
- Doughnuts
Yes, you can also make your favorite doughnuts by using spoiled milk. Take 3 cups refined flour, a tsp baking soda, 2 tsp baking powder, ½ tsp cinnamon powder, and salt, mix everything together. Then in another bowl, whisk 2 eggs, ½ cup sugar, 1 cup spoiled milk, and 2 tbsp butter. Add the dry ingredients and mix it all. Refrigerate this dough for 2-3 hours. Cut the doughnuts and then fry them until golden brown. Glaze them with your favorite toppings.

I love this Bengali sweet, chum chum that can be made using curdled milk. Take one liter of spoiled milk and stir until water separates. Filter the water and extract the cheena. Add 1 tablespoon maida and knead well. After that shape, the chum chum rolls, fry them in sugar syrup, and add khoya.
